Cheese Marinated in Tarragon and Garlic

Information

Manchego or Feta is usually used for this recipe. You may also use italian Cambozola cheese or another tangy, firm-bodied white cheese, or a mixture of two or three types. You can vary this recipe easily according to taste, but be carefull no to use ingredients that will overpower the cheese.You may also vary the herbs or add two or three fresh or dried chili peppers to the marinade. Sun-dried tomatoes make a great accompaniment.

Ingridients
2 bell peppers
2 cups (500ml) extra-virgin olive oil
1 cup (250ml) tarragon vinegar or red wine vinegar
2 tablespoons chopped fresh tarragon or 2 teaspoons dried tarragon flakes
2 teaspoons freshly ground black pepper
1 head garlic, each clove smashed but unpeeled
1 lb (500 g) Manchedo or Feta cheese,cut into small cubes fresh tarragon sprigs, to garnish

Instruction

1. Roast the bell peppers.Thinly slice the roasted bell peppers into small strips.

2. Combine the olive oil, vinegar , tarragon , pepper and garlic in a jar wiht a tight-fitting lid and allow to stand for one week

3.Strain the oil, pour the mixture over the cheese cubes in a bowl to just cover, then set aside to marinate for two days. Transfer to a serving platter, top each cheese cube with a bell pepper strip and serve,garnished with tarragon sprigs.
